Valentine’s Day Cupcake Sundaes

Baking cupcakes in ice cream cones and decorating them like sundaes gives them a retro diner twist. And it gives you an excuse to add a unique, creative touch to each one.

Val sundae cupcake

Ingredients

  • Your favourite cake recipe (or mix)
  • Your favourite frosting recipe (or mix)
  • 24 Flat-bottomed ice cream cones
  • Pink and red sprinkles
  • Red decorating gel
  • For “cherries,” use cherry sourballs—poke with a toothpick and add a red licorice “stem”
  • Paper straws (cut in half for cuteness)

Directions

  1. Prepare the batter as directed.
  2. Pour the batter into the cones, filling them about half-way.
  3. Bake as directed for cupcakes and allow to cool completely. Pro tip: Bake in muffin tins or cut holes in an aluminum pan and turn it upside down on a sheet pan to hold the cones in place.
  4. Pipe generous swirls of buttercream frosting on top to look like soft serve ice cream.
  5. Decorate each as you would an ice-cream sundae—with sprinkles, drizzles of decorating gel, “cherries,” and straws—or make a “Cupcake Sundae Bar” and let kids top their own.
