Sufganiyot (jelly donuts)
In Israel, the official food of Hanukkah is Sufganiyot, which are fried jelly doughnuts. With one taste of these sweet, soft, pillows of happiness, you’ll understand why. Again, your time should be spent celebrating (not cooking, bubbeleh), so try this Sufganiyot recipe for a simple version of a beloved favourite.

Ingredients
- 2½ Tbsp. sugar
- 2 eggs
- 1½ cups sour cream
- 3 cups unbleached flour
- 2 tsp. baking powder
- Vegetable or canola oil
- ¾ cup jelly or jam
- Powdered sugar
Directions
- Combine sugar, eggs, and sour cream. Blend well. Mix in flour and baking powder.
- Heat oil in deep frying pan. When hot, add a tablespoon of batter and fry until doughnut is light brown and puffy, then turn and cook other side.
- Place sufganiyot on a stack of paper towels to cool and drain. Repeat until all the doughnuts are fried. Using a syringe (or a snipped corner of a jelly-filled sandwich bag) put a little jelly in the centre of each. Sprinkle with powdered sugar and fress away!
