Raise a toast to spring with this sparkling butterfly pea tea

As the first warm evenings of spring return, most of us find ourselves craving a cool drink in a comfy, sun-drenched spot outside. And while we aren’t typically the sort to brag, we gotta say that we have the ideal spring sipper right here.

Made with butterfly pea tea that gives it a gorgeous purple hue, this beverage brings to mind all things spring: blossoming flowers, fluttering butterflies, and long evenings spent outdoors with loved ones. Learn how to make it below!

Butterfly pea tea is more and more popular these days, but if you can’t find it at your local grocery store, turn to the internet. A simple search will bring up tons of brands and sites that sell the tea in bags or loose leaf.

Helpful tip: If you’re buying loose leaf tea, it’s helpful to know that tea bags hold about 2 grams of tea each. So you’ll need 16 grams of loose leaf tea for this recipe.

Ingredients

  • 1 qt. Water
  • 8 bags Butterfly pea tea
  • 1/4 cup Honey or sugar
  • 1 litre Chilled sparkling water
  • Blackberries or blueberries
  • Mint sprigs for garnish

Directions

  1. In a large saucepan, bring the water to a boil. Add the tea bags and steep for 5 minutes.
  2. Remove the tea bags and add honey or sugar, stirring until it’s completely dissolved in the hot tea.
  3. Pour the tea (carefully!) into a jar or other airtight container and refrigerate until well chilled.
  4. Once the tea mixture is chilled, pour it into a punch bowl and add the chilled sparkling water and berries.
  5. Serve over ice garnished with mint sprigs.
