Ingredients

  • 6-8 cups stove-popped popcorn (we used ⅓ cup popcorn and 3 Tbsp. olive oil)
  • 2 Tbsp. butter
  • 1 Tbsp. olive oil
  • 1 tsp. dried rosemary
  • 1 tsp. dried thyme
  • ¼ tsp. garlic powder
  • 3-by-3-in. chunk of Parmesan, finely grated
  • Salt to taste
  • Pinch of dried red peppers

Directions

  1. Preheat oven to 200°F.
  2. Empty the popcorn into a large bowl.
  3. Melt butter in a cool to warm pan. Add oil to the butter.
  4. Stir in the dried seasonings and infuse the butter gently over low heat for 5 minutes.
  5. Add ⅓ of the herb mixture to the popcorn and mix with a large spoon. Repeat, adding ⅓ of the mixture at a time and stirring after each.
  6. Pour the popcorn on a baking sheet and sprinkle the grated Parmesan over the top.
  7. Warm in the oven until cheese melts, about 3 minutes. Salt to taste.
